[Music] [Music] hi friends welcome back to my channel if you are new here my name is Lynn and this is my little rule Homestead today we are making a retro recipe this recipe comes from Better Homes and Gardens and we are making sourdough pumpkin muffins so I started a new sourdough starter it is ready to go this is the fourth day so I'm going to go ahead and get my half2 cup measuring cup and some utensils and we'll be right back so we can jump into the recipe okay the first thing we need is 1/2 cup of sourdough starter okay and I have two cups of flour already in the bowl I went ahead and measure that okay I'm going to have to feed this I'm just going to set it over here to the [Music] side okay we need uh two teaspoons of baking powder I have in here and then we need half a teaspoon of baking [Music] soda I'm just going to give this a good mix then we need one egg [Music] beaten [Music] and we're going to do another good mix and then we're going to add in half a can excuse me half a cup of pumpkin and I'm just using this true goodness organic 100% pumpkin okay I Incorporated all those ingredients now we are adding half excuse me one4 cup of milk and I'm using organic valley pasturised milk so one4 cup of milk and then we need one4 cup of oil I'm using organic extra virgin olive [Music] oil you know what's good when it's green your olive oil should definitely be green so if it's not green it's not good okay so olive oil and then we are going to add in one4 cup of honey and I'm using aunt Sue's raw unfiltered Clover Valley [Music] honey oh my goodness [Music] okay okay now we are going to add in half a teaspoon of organic [Music] nutmeg is half a teaspoon definitely a half a teaspoon half a teaspoon of nutmeg and then half a teaspoon of [Music] cinnamon I love the smell of nutmeg and cinnamon okay now I'm going to incorporate these two items and I'm going to use the blender so we're going to shut off the camera and then we'll come back once it's all Incorporated okay um the batter is all mixed and now I'm just going to fill each of these cups 3/4 of the away F full and I just wanted to note that the batter is supposed to be lumpy which it is it is Lumpy but it's going to take me a minute to fill all these cups so I'll meet you back here when I'm done filling all the cups okay friends our muffins are in the tin I had the oven preheated to 400° we're going to put these in for 20 minutes so in 20 minutes they will come out of the oven and then we will take a taste test I'm going to throw them in here now and then in the meantime I'm going to feed in the meantime I'm going to feed my sour dough starter tomorrow I think I would like to make some pancakes it's really good like I said it's the fourth day for this so I need my flour unlike a lot of other homesteaders I do measure my flour and I measure my water so I have a/4 cup of water here so I pour that in and then I add six tablespoons of flour when I discard and I'm not using the discard I'm putting it in the refrigerator to three four just enough or a little bit more five and then one more and I can refill my container so I have six I'm going to refill this and then once I refill it I'm going to put my band on here and secure it with the rubber band so I put my sour I put my discard in the fridge so this is what it looks like that way I don't ever ever have to throw my discard away and then tomorrow morning I can make my pancakes it calls for a cup of discard so what I'll use is this discard and then I won't have to dump any from here into here so that's what I'll be doing tomorrow morning so now I'm going to give this a good stir and then we'll put the top on [Music] I do have a video uh it is a step by step how to start a starter you can buy starters apparently from Amazon I've never done that this is my second year using sourdough starter so I'm a newbie uh but I've had excellent luck with this recipe like I said you can start the recipe with one qu cup of water and six tablespoons of flour and then you just feed it every 12 hours and for me it has worked out really well I from the get-go I've never had any problems with the starter it started fermenting like on the second day um so yeah it just works really well it's a lot cooler in the winter than what it was in the summer so in the winter I just put it on top of of the stove because it has a little bit of heat on the stove so that's how I do it okay wipe my [Music] hands okay I think tomorrow I actually might change jars that way this jar can get clean so I'll just dump all of this into a clean jar and then we'll wash this jar okay and sometimes you have to wash the top too so I double this and put it on like that but I will go ahead and Link My video step by step how to do sourdough starter as well as I have another one um I made cinnamon rolls oh my gosh they were so good the cinnamon rolls were so good but now we're just going to wait for the muffins to come out of the oven and then we'll do the taste [Music] test okay we're going to check on our muffins oh my gosh they look so good they smell good too and look at how much they raised wow that is impressive okay we're going to turn this off and I'm going to put these without burning my hand I can grab it look how good those look 20 minutes in the oven sour pumpkin muffins this one looks like it's raised up about an inch from the bottom that is really and this one too and this one they're all raised up really high so I'm going to let these cool before I attempt to do a taste test and our little recipe book It's Better Homes and Gardens all-time favorite bread recipes it is I think it's 1979 yeah 1979 so retro not vintage but retro um where was I 1979 I think I was in the eighth grade all right let's go ahead and give these muffins a taste test I just can't get over I just can't get over how much these raised look at that that pretty nice golden brown and I love this wrapping paper too I bought this wrapping this muffin paper last year it's green like with little white dots on all right so I normally what I normally do is put butter on my muffins but this first taste I'm just going to taste it without butter to see how I like it so [Music] see okay initial taste is I think they're dry so maybe add in a little more milk the recipe called for a/4 cup of milk then they are a little bit dry The Taste is good but they're [Music] dry I am definitely going to add some butter and I would highly recommend maybe I don't know adding some more adding some more butter maybe I mean they taste the sweetness is fine the level of sweetness is fine it's just the dryness so I think maybe maybe more milk would definitely help so anyways that is going to conclude this video thank you
