place of the Renaissance Florence Italy a look inside any of their traas reveals the incredible food meat to this region of Italy now this is a city worth its weight and gold but that doesn't bother me a bit I like a challenge and I've got 24 hours and $40 which is about €45 so can I discover all the Gourmet Treasures this magical city has to offer without going over budget stick around and find out [Music] Florence has always been one of the wealthiest most vibrant and beautiful cities in western civilization today it's home to Europe's greatest concentration of artistic riches surrounded by these Treasures visitors soon realize that the Renaissance is still very much alive here Florence is truly a celebration of humanity in all its Glory nestled among Vineyards and Olive Groves Florence has a rich culinary Heritage as well simple and Hearty the cuisine reflects the Tusk and emphasis on bread beans grilled or roasted meats and above all else deep green Extra Virgin Olive Oil leave your calorie counters at home Florence is not a city for those who are even thinking about going on a diet [Music] breakfast isn't a major meal in Italy so like most florentines I skip it instead I head out to a nearby cafe for a cappuccino and a coretto or Italian quason you know many of the hotels in Italy they're going to include the price of a full breakfast with your room and sometimes especially offseason they'll take it off if you ask them to that's what I did here in Florence and you know not only am I saving some money but I avoided a pretty mediocre breakfast plus I can come here gibberosa and I can have a wonderful espresso and little caretto and it's very inexpensive plus I can just go over my guide books and relax EAS to the day not bad for € which is a little less than $2 you know when you come to the cafes make sure you stand at the bar the espresso and anything else you order is always going to be cheaper here than for table service there's a good tip there one more thing to know in Italy restaurants include tax and tip in yours which makes budgeting the day much easier fortified with caffeine and bread I'm ready to take in the sites at the Piaza de la senoria the heart of Florence since the 1300s gotcha That's my kind of Museum it's in the street you don't have to go inside dominated by the centuries Old Town Hall the squar is also an outdoor sculpture Gallery these statues some original and some copies represent important events in Florentine history this isn't really David it's big David little David's across town I prefer Big G Florence is a city to see on foot you can get almost anywhere in about 20 minutes takes me much less time than that to stroll over to the city's religious Center the Piaza Del wo wow wow wow wow wow wow the vast Tri color marble duo or the cathedral is a symbol of Florence its massive Dome is visible from almost every angle in this compact City look at this marble work unbelievable now after visiting the most famous landmark in Florence it's only fitting that I sample some of its famous Cuisine for lunch but finding a good recommendation is an adventure where's a good place beautiful luckily I remember a place I read about out this morning and my admirer has heard of it I think there right all right I'll check it out thank you guys I got to [Music] go sanza better known as Ilya which means the trough was founded by the campon family in 1869 the restaurant has changed little since and it's a well-loved spot frequented by local from all walks of florentine life the atmosphere is warm and Casual if you ask for more bread your waiter will just hand it over just like at home the waiters and chefs actually own El trya so they are eager to please and can keep prices down and because they buy their food directly from producers in the tuskin countryside they can charge even less tuscans are proud carnivore and the most popular meat dish in Florence is the B altino wow that's [Music] huge you got to use two knives to cut it you got to cut through the fat and the meat and you got to break the bone and that's for two [Music] persons you have to follow the thickness of the bone uh at the back you know each lumbar so this one was smaller so this is for one person so I want that one the steak is grilled over wooden Embers right on the stove top never seen anything like it but I have heard my Sicilian mother talk about it and you just turn it every few minutes little salt so what makes it so special is the method really not the sauces or extra ingredients just the method is important beautiful beautiful color very good color and smells so good amazing 1 [Music] minute thank you so much I cannot wait to eat this it smells so good [Music] [Music] that is the best Ste I have had ever it is so good and I understand now why theaa is the dish in Florence I can't talk anymore I just have to eat this so good aged steak hand cut with a glass of house wine for just under $19 with my coffee and Cornetto I'm only about $21 into my $40 day in Florence still I'm a little bit worried because you know that is half my budget for the day but I got to tell you worth every penny I'll figure it out coming up the streets of Florence get Lively and prove to be the perfect place for shoing shopping and eating but is there room in my budget for this beautiful bread stay tuned uh the secret ingredient there isn't a chef on Earth that likes nasty surprises chefs are about control everything in in a chef's life is about a balance between creativity and control and by is also famous for luxury goods and Artisan products like leather goods jewelry and fine silks that means it's a fabulous City for shopping and like so many places in Europe you can shop right on the [Music] streets that's fine that's fun nice that's enough I love this color look at this huh it's my color no really cool and it's already wrinkly so you can pack it really well uh bargain there's nothing like a little shopping to stimulate the appetite and I know exactly what I want for a snack only good pizza joints around here down the left perfect awesome a great skirt and a great tip thanks from its roots as a street snack in Naples Pizza has become the best known Italian food in the world in Florence where people don't eat dinner until 9:00 p.m. or later Pizza is the perfect snack to tide you over you know Pizza is to Italy what apple pie is to America and here in Florence well all over Italy actually you can buy it by the gram so you can get a little you can get a lot cool right word on the street is this place Forno it's the best a family run business since 1933 Forno saroni bakes a variety of Tuscan breads cakes and pizzas oh I'm in love look at that one the Bakers at Forno saroni take great pride in maintaining the spirit of their forefathers who made bread for workers and peasants at a price they could afford one of their Specialties is scata which means flattened it's a long flat Florentine bread which is eaten plain or or used for sandwiches filled with cheeses pruto or fresh vegetables this one has hot pepper zucchini and rugula rugula sounds awesome oh look at that pizza margarita I'm going to get a little piece of that and a little piece of that sounds like a PL skata skata skata zucchini see perfect ento G Margaritas Margarita Margarita right on she understood me pizza margarita is a simple tomato and cheese pizza first the crust is covered with tomato sauce and baked in the biggest oven in all of Florence then right before it's kneaded out front the pizza is topped with cheese and baked a few minutes [Music] more porno Saron continues its tradition of providing mouth watering and affordable baked goods by keeping the whole family working and making their products from scratch yummy yummy yummy hello the pizza and the scata plus the mineral water sent me back just $6.5 not bad a I can't wait to try this skat [Music] m m spanned by several picturesque Bridges the oldest and most famous among them is the Pont Veo built in 1345 it's the only bridge that wasn't destroyed by Hitler's R treating troops in 1944 look at the view from up here once occupied by butchers and skin Tanners the busy Landmark has been home to goldsmiths and Jewelers since the 1600s look at all this jewelry shop after shop but it's the real stuff to check out but first I decide to get a second opinion from a local have you heard of that one Wonder yes yes is it okay very very good it's good it's very good so where are we we are here you are on lines outside of this place I found it in my Florence and Tuscany guide book but I confirmed it on the Pono with Clara one of the merchants she says it's great better than that the owner he brings out wine and cheese to the people standing online that's all I need to know I'm getting online [Music] IL latini is a gastronomic institution in Florence there's always a line of eager tourists and locals waiting for a seat at one of the long wooden tables the latini family brings in many of the menu items including much of the wine from their estate in Kean thank you one look at the Pudo hanging from the ceiling and the generous portions being passed out and I know I won't walk away from ill latini hungry I asked for the specialty of the house and I'm told to try IL latini's homemade three soup platter which consists of riita Papa Al Pomodoro and bean and barley soup sounds fantastic good hope you say it's good I try this is great I get to sample not just one but three tusin soups a local favorite riita is a vegetable soup made with Believe It or Not stale bread the chef starts by sautéing carrots and red onion in plenty of extra virgin olive oil quartered tomatoes are added followed by chopped greens parsley celery basil leaves and cabbage water salt and pepper are added to the vegetables and then they cook all day day long after chunks of homemade bread are added the soup looks more like bread pudding this vegetable soup is so comforting and Rib sticking the other two soups in the sampler are made very much the same way as the riita slow cooked with a variety of fresh vegetables three relatively simple recipes elevated by the pristine Bounty from the latinis estate in the Tuscan Countryside and by cooking with their own Pro produce the latinis are able to keep prices [Music] down this is be soup with barley wow this is bread tomato soup Pap this isib riita riita fantastic all of this for one when it finish I get more no problem okay A little over little olive oil olive oil okay and uh please fantastic tast it I'm going to taste separately I promise I promise Fantastic look at this Feast I'm going to have the rivita first cuz it's the most famous the most talked about oh it looks so wonderful look at all those [Music] vegetables that is incredibly delicious it just melts in your mouth I'm so glad I checked and confirmed what the guide book had to say you could do that a couple ways ask the locals and look for the lines it just makes sense you know busy times lots of people equals good food you can get seated right away at an empty restaurant but hello it's empty for a reason you know what I mean between the coffee and Cornetto this morning bista ala fantina at lunch my afternoon snack of pizza and scata and this sizable soup sampler I recommendation in hand I get in a quick tour of this beautiful city before nightfalls and when I travel I like to separate my meal budget from my sseeing budget so I don't worry about spending too much in one day [Music] oh yeah I head over to Aqua Alou a restaurant popular among the young International crowd they're known for the asio Dei a sampling of five different pasta dishes but according to my internet source they also offer a great dessert sampler as well a look at the menu posted out front confirms it so I'm [Music] in yeah the AAG dul is that what sounds fantastic I'll have that I think thank you the sampler includes tiramisu passion fruit cake white chocolate mousse and a carrot hazelnut cake all these Delicacies are made right here on the premises which enables the owners to charge a little less [Music] wow thank you holy cat look at that it's huge okay I've got to start with a taste of tiramisu though it's my absolute favorite I can't even describe it to you it's just I'm in what must be one of the most beautiful places on Earth Tuscany Italy now the Region's known for its rolling hillsides the Villas the food and the wine but can I discover a region as rich as this with limited time and a limited budget well I'm about to find out cuz I've got 24 hours and $40 which is about €45 can I discover a taste of everything Tuscany's got to offer without having to bet The Farmhouse stick around and find [Music] [Music] out oh look at that you cannot do Italy without doing Tuscany and you can't do Tuscany without driving through it I could not wait this morning to just get up grab a quick cappuccino and hit the road cuz this this is what being in Tuscan is [Music] [Applause] about look at this you're going to see all of these little ruins and Vineyard after Vineyard this is the Kean Road and this is the road to take from Sienna to Florence if you want to see Tuscany and it's glory Tuscany is a region comprised of many small villages in towns everywhere you turn here you're going to see Rolling Hills Terrace farmlands and stone buildings that inspired so many great Masters the food's in Inspiration as well tuskin Cuisine draws heavily from the olives mushrooms grains beans and meat produced in these Hills meals are fresh and simply prepared an inexpensive way to taste the true cuchina Toscana is to visit one of the small country farmhouses where the food is grown and raised just a few meters from where it's served I got a tip from my hotel front desk that said there's an incredible restaurant for lunch in the walled city of Monta dejon I scribbled it on to my journal so I wouldn't forget look up on the mountain there oh it's one of those little walled Villages you see them all throughout Tuscany they're these little medieval towns you park outside you climb up inside it they're all 12 13th century amazing I can't wait to get inside one [Music] wow this is amazing called monteron this Village was built in the 13th century to protect the people of nearby Sienna from The florentines Today The Village has a population of about 60 this well well it's very famous ILO is what they call this and this this is the well that Dante wrote about in The Divine Comedy which makes it a Divine well the well or ILO is also the name of a restaurant housed in an old stable across the way owners voria and Luchia serve traditional Tusk and fair from produce grown right on their neighboring Farm meats and cheeses come only from the surrounding area there's no better place to taste True tuskin Food and the price is right too Victoria and Luchia keep prices low to ensure the tourists will make the trip to this out of the way Village how wonderful this looks everything at elolo is made from scratch even the desserts and pastas one of the Specialties is a dish called papel Al chigal or Ribbon macaroni with wild boar sauce Luchia lets me observe as she makes the pasta paperell is going to be like wide fet aini and it's an egg pasta it's going to be [Music] delicious this is a reason to make your own homemade pasta isn't it fun I mean it looks like play school looks like Play-Doh got to roll it out in and no machine here this is the machine [Music] see okay there he it's made with a lot of work a lot of love so this is the it's rolled up and when it Cooks becomes ribbons little wide egg ribbons of fresh pasta It's like a fat fetuccini it's like a fetuccini with an attitude got them there beautiful [Music] see compliment beautiful I'm going to go look outside I'll leave you as Luchia gets the rest of my meal ready I take a look around the old farmhouse with vor's daughter Franchesca we begin with the ancient wine seller Mur this used to be a passageway to go out the city used during times of battle to flee the town the Escape Route is now closed but the surrounding Cellar makes a great place to store wine back upstairs Franchesca shows me several dining rooms in the area that used to be the Grainery and Stables meanwhile back in the kitchen my fresh pasta is drained and added to the sauce I can't wait to taste it J that's oh it smells wonderful you know the sauce is made with bore and that may sound a little exotic for you but let me tell you it's going to taste just like meat sauce and here in Tuscany every single place serves it it's one of the Specialties and my wallet especially likes the price the pasta was just over €7 equal to 654 us and because the tax and tip are included on your bill here what you see is what you pet since the cappuccino I had for breakfast was free with my hotel room that Kean Classico Lush hillsides are also dotted with ancient farms and medieval castles many of which have been converted to wineries [Music] perched high on a Hilltop the castle of verzano was originally an at truscan settlement it fell into Roman hands and then became the property of the verzano family in the 7th Century the wine making tradition here dates back to the year 1170 this place is spectacular I found the Castell in one of my many guide books and it says it's a great place to stop for a wine tasting or lunch or a snack but but you know once you get here before you even take a sip of wine it's worth it the view is unbelievable oh look at that [Music] shot with its Gardens fountains and stunning views of the countryside Castello de verzano is the perfect place to let the wonders of Tuscany sink in and and the vineyard welcomes Taurus for wine tasting baby Vino Viv Alo drink wine live longer tasting here is a great way to learn about and Sample the Bounty of the Kean region and it includes a souvenir wine glass in its own bath we're going to try first the original K two red and two white grapes Blended together coming from the original way to get County old Grapes of The Vineyards collected together this was the wine to drink our host ginosi clearly loves wine and he quickly discerns that I do too I'm half Sicilian that makes my mother know cilian you have to be be careful with the Sicilians and my grumbling tummy is happy to learn that wine won't be the only thing we taste like to provide you the idea of tasting the wine the way we taste which is always seat around the table with something to eat I like the sound of that but first goo takes us out into the sunlight so we can get a good look at the color of the wine it's a pale red but kind of brilliant try to remember this color and compare it with the next three wines that we're going to serve to you after explaining the importance of swirling and sniffing the wine Gino demonstrates his extremely complex method method of tasting the wine okay at this point look carefully what I'm doing bra beautiful full complete pleasure don't forget the wine is even better when you eat something can't resist stopping by the wine shop to pick up a bottle for my mom what a wonderful time I've had here Gino was a riot and I thought I knew something about wine tasting but he really did teach me a thing or two and these little bags forget about it this is going to replace my purse I can taste wine wherever I go now and Mama she's going to love this Choice it's Gino's favorite and I think it's going to be her favorite too and if she doesn't like it it won't go to waste because I've tasted it and I know I love it the wine tasting was great for my budget too all the wine and food cost only a walled city is one of the most perfectly preserved medieval towns in Tuscany Sienna flourished in the 13th and 14th Centuries with economy built on Banking and commerce during that era the Cen people built some of the most magnificent Gothic structures in Italy look at this the grand DL is decorated with marble inside and out amazing the university in Sienna dates back to the year 1240 and this building dating back to the 12th century was thought to be the world's first bank the Steep and and winding cobblestone streets look the same as they did in the Middle Ages although today they're home to a lot of pottery stores wow oh God you know I've been all over and I have never seen this quality unbelievable made by hand of [Music] course after a little shopping I decided to check out Sienna's famous city center everyone seems to gravitate to this spot okay so this massive section here this is called Kat Campo and this is where they have the Paleo that's this crazy beb horse race where they just race around this uh this big opening here and everybody stands in the middle and cheers insane during that I'm kind of glad we're not here then with its soaring Bell Tower the gothic Palazo PUO or town hall dominates the fan-shaped Piaza once the backdrop for bull fights executions and public demonstrations ILO is now a place where locals and tourists alike come to relax and eat let's check out what the prices are like not too scary but knowing I might find something even less expensive for dinner away from the touristy areas I ask a local who directs me to a nearby place I never would have found on my own just off the beaten path antia trara papay is located on the ground floor of the medieval [Music] Palace antia means ancient and while papy has only been around for 50 years that's forever in the restaurant business the familyowned traia attracts young locals with traditional Cen dishes and low prices okay and aqua perfect okay good okay so I think I ordered uh duck and it's done in their style and I ordered some mineral water and a little mixed salad the chef Roberto papy starts by chopping old stand SP parsley onion and celery next he adds chopped duck gizzards followed by Sage Rosemary red pepper and garlic now we're getting somewhere Roberto then drenches everything in extra virgin olive oil and slides our freshly buttered duck into the mix once the duck has browned he pours in some Kean and adds tomato paste and water a healthy dose of simmering transforms the duck into a tusen [Music] Masterpiece a at oh looks beautiful thank you you know I don't order duck out too often cuz it can be a little rich but this looks just perfect fantastic you know what I like best about Tuscan food is that it's very simple they keep the recipes very very simple few ingredients you can really taste the flavor of what it is you're eating you know this isn't all covered up with sauce you can really appreciate the duck and it's done perfectly complimenting here in Tuscany simple food prepared with fresh ingredients is easy on the budget if you know where to look the duck mineral water and fresh green salad came to about $12.5 which brings my total for the has to be white p peaches white if it's yellow peaches no way right okay really so no raspberry puree or strawberry the what makes it this color actually is the nut you know you call it the nut the more the shape of a Roma lettuce and they use it to grill it here here we've got some artichoke carts so what they do here in Venice and this is the only place you can find them is that they clean them for you slice the archo cart and then cook them just a little water and salt and they are [Music] fabulous we've got some scampy here now scampy in Italy are not what we think of scampy in America we think they're just shrimp they're actually baby lobsters lots of Spidey little legs big eyes and they're so succulent and delicious all right let's see what else we got now the squid they're dark because of the the ink they have these little sacks and as they get bigger they have the sacks fill up with black ink then they make spaghetti and sauces out of it and then over here we Italian vacation of a lifetime I've spent a couple of days in Venice and I still have one more stop before I head to the next city cruising through the Venetian islands is the coolest way to travel I'm going to Morano island famous for their Venetian glass let's park and find a souvenir or two [Music] this is benini the largest producer of Venetian glass on Morano venini is best known for bringing sleek and modern touches to the traditional art of Italian glass making I've always heard about Morano glass and it is so cool that I can't even begin to explain how cool it is that I'm here wonderful reminder of my stay in Venice by my Italian vacation has only just begun Venice I'm heading 4 hours Southwest by car to the Amilia Romana region the capital here is parma also known as Italy's food [Music] Valley Parma is a Charming City that's rich in history and culture its gorgeous DW was built in the 12th century and its famous Clock Tower is not much [Music] younger you may be surprised to discover that it's not the art and history that put Parma on the map people bike here for a reason and it just might have something to do with the food people believe that Parma is the culinary Center of Italy but I came here for three reasons and they all start with a P moano and [Music] pasta Parma is home to burilla the largest producer of pasta in the world despite its enormous size the burilla company is still run by a family and it has been for four generations pick a shape they've got it about 160 of them spaghetti pen fili these are just a few and boy do they make a lot of it burilla produces over 7 billion plates of pasta a year now that's a pasta party most of us have heard of gorilla and a lot of us have cooked and eaten their pasta but I recently discovered that the cows that morning and skim milk from the day before the milk is heated a natural enzyme called renit is added and within a half an hour the curds begin to separate from the way the curds are cut by a giant whisk the spino they gather all the curvs into a big burlap sheet and then divide it in half for exactly two wheels of cheese all right enough talking let's cut some [Music] cheese don't cut the sack only the cheese this is really hard so you're kind of slicing through it it's like cutting through a big rubber ball that hat does not want to stay on okay B it's John he said it's good each giant bundle is placed in a mold dated and allowed to rest and dry for 2 days the cheeses are submerged into a sea salt bath for 20 days this Seasons the cheese and helps create the natural rind the cheese then retires to the Fort Knox of Parma and hibernates for at least one year now it's ready to be eaten or grated on your favorite dishes so cool don't go away next we'll break One open and mozzarella top that looks really good I think I want to P that so in Rome the pizza is really long it's over a foot long and they ask you how much you want they warm it up then they fold it over and eat it like a sandwich get o zucchini perfect smoke mozzarella mushrooms and P they're going to be happy with that come on in Rome they serve it like this you know they like to serve it like this like a sandwich easy to eat M I think my is a little bit big but try to screw in Pizza M we go too dangerous we're going to finish this then we'll go cuz then after this I need something a little [Music]
