we have used fermentation in our food production for Millennia more recently the fermentation process has also made it possible for us to create new types of proteins that can be used as part of a nutritious diet as an alternative to animal proteins there is however one big sustainability issue fermentation requires sugar which is grown on valuable Farmland we want to solve this problem by using CO2 captured in production facilities to replace sugar in the fermentation process by doing so we can prevent harmful CO2 emissions to the atmosphere and use the CO2 to drive a green transition of agriculture in a new project funded by The Bill and Melinda Gates Foundation and the Novo Nordisk Foundation researchers from biotech and electrochemical companies and universities in Denmark and the US will work together to reach this common goal through biological and electrochemical processes the project Partners will use the CO2 captured from production facilities and convert it into acetate a well-known substance already used by microorganisms in the fermentation process by adding the acetate directly we can skip a step and bypass using sugar altogether in the fermentation process this would enable a significant reduction in land use for farming purposes in fact if we were to use the CO2 from the cement production in Egypt the estim automated reduction in land use would equal an area larger than Argentina in addition we could produce enough protein for more than 1 billion people every year creating a stable source of nutritious food for people living in areas with limited potential for conventional agriculture the ambition is to create a new sustainable food supply that makes it possible to feed a growing world population with without straining the Earth's resources unnecessarily [Music]
