this might trigger some people but I'm convinced that if you don't like kimchi you're probably eating it wrong or just haven't found the version that works for you so today let me introduce you to one of my absolute favorites chonga kimchi also known as ponytail radish kimchi and trust me this one's a game changer so why are they called ponytail kimchi in English that's because these radishes have these long leafy stems that kind of look like ponytails but it's not just their name that makes them unique the real magic is in the crunch imagine a satisfying snap with every bite almost like Nature's version of chips it's incredibly addictive growing up my grandma in South Korea the best chonga kchi she would whip up huge batches for the extended family and always share a generous container with us her passion and skill for making kimchi were truly inspiring and they became one of the biggest reasons I decided to learn how to make it myself after she passed away I wanted to carry on that tradition of making kimchi and sharing it with others now every time I enjoy it I'm reminded of her and her love for cooking and it brings back all those comforting memories making chonga kimchi is easier than you might think just mix up the paste coat the radishes and let them ferment for a few days
